We work directly with Quebec farmers who share our values: respect for animals, sustainable practices and transparency at every stage.
Each carcass is received whole at the butcher shop, then cut up on site by our team, in order to highlight all parts of the animal — not just the most popular ones.
This is our way of reducing waste , honoring the work of our producers and allowing everyone to discover new cuts, sometimes unknown but always tasty.

DELI MEATS
We prepare all our cooked deli meats ourselves — bacon, ham, porchetta, pâtés, rillettes and other homemade specialties — without added nitrites or preservatives.
We also produce some dry-cured meats on-site, including coppa, lardo, guanciale, and bresaola. Our products are made from meats sourced from our local partner producers, with a constant focus on quality, traceability, and authentic taste.
To complement our range of dry-cured meats, we collaborate with the renowned Quebec artisan:

DRY RIPENING
All the beef displayed in the window at Verdun Beef is matured on the carcass for a minimum of 2 to 3 weeks , an essential process that develops the natural tenderness of the meat and concentrates its aromas .
We then continue this patient process with dry aging, carried out directly on site in our controlled maturation chamber. Certain exceptional cuts—such as rib of beef , chuck steak , or pork chop —rest there for between 45 and 60 days , allowing more complex flavors, a melting texture, and an incomparable depth of taste to develop.
At Verdun Beef , we consider aging a craft in its own right , dedicated to quality and respect for the animal. Each cut is selected, aged, and butchered with the same meticulous care, to offer meat at its full potential.
